You know a day is good when...

...you get to take a 2 hour nap!  I was so tired this morning, and then while we were at Molly's art class I got this nasty headache.  So we came home, ate lunch, and I told Molly she'd have to entertain herself for awhile because I really needed to lay down and take a nap. Well, she did such a good job of that that I was able to sleep for 2 hours!  Nice.  Luckily I could do that without feeling too guilty because I had already cleaned the floors this morning.  I have some other things I need to do, but they can wait.

John found his raise for the year - a measly 3.1%!  Lame.  Especially after last year's 14% it seems particularly pathetic.  I know, I know, the economy, but as Chrissie has said, I think some companies are just using that as an excuse to cut back.  I can't see how his company (who does mostly government contracting) could really be much affected by the economy.  Whatever.

Remember my turkey stuffing burgers?  (If you don't, you mix ground turkey with chopped onions and stuffing mix, then make patties out of them.)  Well, we're going to try it tonight with beans!  We all love those, so I'm really hoping I can make them work.  Hmm, just realized we don't have any hamburger buns.  Well, we'll figure something else out because no chance I'm going to the store now (Anna is a little crabby when she gets home).  And, to celebrate fall's arrival, butternut squash!  Mmm.

It seems my penchant lately has been to buy a LOT of food.  I don't know why.  And different food than we normally eat; I think I was swept up in trying to give Anna interesting, kind of fun snacks for school.  No more!  She doesn't need to eat that crap and I don't want to spend the money (our grocery budget was completely blown this month).  So anyway, I'm trying to use up the food we have before I go grocery shopping, but some things are getting a little low.  Broccoli is on sale (ending today) at Safeway, so I think I'll run out and get some tonight and that should at least do us on the fresh veggies for a few more days.

OK, time to go cut up the butternut squash so it's ready to roast once Anna's off the bus.  Later!

I make buns and pitas and pitas are so much easier than bread, IMO. You can't leave us hanging without telling us how you made the burgers and the squash! What kind of bean and how much adn what do you do to your squash?

i've been thinking about you a lot this week. we made vegan cookies and vegan pancakes this week since grace is allergic to eggs. i was wondering how you make banana bread? also we had ratatouille while my folks were here and i thought of you... that's an easy, filling dish you could take to people when you need to bring something... and if you want you could throw it over some pasta or rice... glad you got a nap. those can make all the difference sometimes!!!

They were delish! And I love my butternut squash recipe; usually people go sweet with this squash but mine is more savory. Mmm. I have a cookbook for bread (which was my Mother's Day present two years ago - argh!) and I actually haven't made anything from it yet. I keep thinking I need to try something - rolls, buns, etc - but the process seems overwhelming. I should try it though! I think I'm going to make pitas this week...

That would be great if you can make those burgers work. They are yummy! I'm surprised you aren't making your buns too ;o)
